The town's real festival is at five in the morning, in December
Monopoli celebrates its patron, the Madonna della Madia, twice a year — and the town itself says which one counts. The comune's own folklore page gives both dates, 14 August at 20:30 and 16 December at 05:00, and states plainly that August is celebrated mainly for returning emigrants and tourists while the true date dear to the population remains 16 December.
Both re-enact the same night. On 15-16 December 1117 a raft drifted into the harbour carrying a Byzantine icon, and its 33 pine beams supplied the roof the cathedral still lacked. The December version begins with an all-night vigil and ends with a torch-lit landing at first light in the port.
So the most authentic mass gathering in this beach town happens before dawn in the coldest month, which is precisely where a climate score ranks it worst.

June or September. Both give warm sea and open coves without August's peak near 31C, which is also the crowd peak when Italian domestic holidays fill Puglia. September is the pick — the Adriatic is at its warmest after a summer of heating and the town returns to something like normal life.
